Cooking class in June part 1

I had cooking class with German weman today. She is travelling around Japan and is going to South Korea. We made 4 dishes: ・Deep-fried tofu with vegetables ・Vegetable with tofu dressing... ・Steamed rice ・Clear soup with mushrooms
And I served simmered pumpkin, cucumber salad with umeboshi (Japanese style pickled plums)paste, and Godofu ( a type of bean curd made from ground macerated soybeans) with wasabi and soy sauce.
She is a vegan, I was thinking about the menu for her. Because we use bonito flake for making dashi stock normally.I've tried to make dashi for vegan with Kombu(kelp) and Shiitake mushrooms.
I hope she enjoyed the class and she would continue her travelling safely.
